Cumbres del Poas “Tour of the Clouds” Coffee Flight

All five of these coffees are from the same farm in Costa Rica. Dona Francisca and her husband, Oscar, are 3rd generation coffee producers on the Las Lajas farm.  They were some of the first pioneers to process coffees in Costa Rica this way.  They grow, harvest, process, mill, and ship their coffees.  They control everything about these coffees until I receive them for roasting.

I have decided to roast all five of these coffees the same way, to a space in between light and medium roast levels.  This means the differences you will notice are purely due to the way the farm has processed the coffees. The cupping notes for the five coffees follows below. Two of the coffees are Natural processed (dried in the cherry) and three are Honey processed (skin removed and varying amounts of the mucilage is removed before drying).  There is also varying amounts of time for fermentation that the beans go through before being sun dried on concrete patios.  All this effort has produced an amazing array of flavor and body profiles between these five coffees.

The Perla Negra (Black Pearl) and Alma Negra (Black Soul) are the naturals (dried in the whole coffee cherry). The Perla come from trees at 1450 meters above sea level.  The Alma comes from trees at 1500 msl.  These trees are of the Caturra varietal.  The Perla is then allowed the ferment for 14 days.  The Alma goes right to the drying process.  Both are slow dried during the morning and covered during the afternoon.  This process takes between 22 and 27 days to complete.

The Honeys are all from the same trees but they have three different varietals: Catuai, Caturra and Villa Sarchi.  They are also grown at 1500 meters above sea level.  The Black honey has 100% of the mucilage (pulp) left on.  The Red honey has 80% and the yellow has 60% mucilage.  They are then fermented for several days before being sun dried.

  Cumbres del Poas means the Clouds of Poas. Poas is the active volcano that the farm is located close to. So, there you go. Enjoy the flavor explosion that is the “Tour of the Clouds”.

Alma Negra:  Tangerine, Pineapple, Cranberry

Black Honey:  Raspberry, Peach, Cane Sugar, Blueberry

Red Honey:  Watermelon, Pear, Peach, Orange

Yellow Honey:  Pineapple, Peach, Orange
